New culinary direction for Sabadell taverna

Taverna Ümet, located on Via Massagué in Sabadell, is entering a new gastronomic phase with an evolved menu and updated wine selection, supported by chef Victor Quintillà and sommelier Mar Gómez. Both are associated with Lluerna, a Michelin-starred restaurant, and are advising the taverna to strengthen its culinary identity and consistency. The changes, announced on Wednesday 14 October 2026 in an interview with RàdioSabadell, do not mark a break from the taverna’s informal roots but aim to refine its seasonal, shareable dishes that blend Catalan traditions with international influences.

Seasonal focus and ongoing collaboration

Quintillà explained that the initial collaboration involved consultancy during the restaurant’s launch phase. The partnership has now resumed with a focus on continuous updates to the menu, ensuring greater regularity and attention to seasonal ingredients.

"There is more regularity, a fresher menu and more attention to seasonality. There is also a rigour and a desire to do things well that were already present, but which are now accentuated,"

said Quintillà. The concept remains centred on informal dining with sharing plates, combining traditional Catalan cuisine with global culinary ideas.

Enhanced wine list with local and seasonal focus

Under the guidance of Mar Gómez, the wine list is also being refreshed to improve food pairings and highlight unique labels. The update includes seasonal wines, small producers, and speciality bottlings, building on the taverna’s existing strong selection. Diners can expect a more dynamic offering that reflects current produce and culinary themes, while maintaining the accessible, local character of the venue.

"We detect that people want to stay in Sabadell and not have to go to Barcelona to find certain things,"

Quintillà said, underscoring the aim to make Taverna Ümet a destination in its own right.
