Llívia’s El Colmado has won the Innovation Award at the second Catalan Tripe Competition, held this Saturday in Igualada as part of the Vadefoodies festival.
The award recognised El Colmado’s creative approach to preparing capipota, a traditional Catalan dish made from veal head and foot. The competition brought together chefs from across Catalonia to present their versions of the recipe.
The result puts a Llívia business in the spotlight at a Catalonia-wide food event, with the prize highlighting how local establishments are adapting classic dishes for modern diners.
